From our apiary in Champaign County, Illinois — raw, unfiltered, and sustainably harvested.
Declaration Honey is raw, unfiltered, and locally harvested from our apiary in Champaign County, Illinois. Our bees forage on clover, wildflowers, and the diverse flora of central Illinois, producing a light, mild-flavored honey with all its natural enzymes, pollen, and beneficial compounds intact.
Nothing is added. Nothing is heated. Nothing is ultra-filtered. From hive to jar, this is honey the way bees intended — pure, natural, and untouched by industrial processing.
Each jar captures the unique flavors of our local Illinois landscape, making every batch a taste of our specific corner of the world.
Every frame is inspected and extracted by hand in small batches. We don't rush the process — quality matters more than quantity.
All our honey comes from one carefully managed apiary in Champaign County. You know exactly where your honey comes from — no mixing, no mystery.
Never heated above natural hive temperature (~95°F). Strained only through cheesecloth to retain pollen, enzymes, and all the good stuff commercial processing destroys.
The price you pay for a jar of Declaration Honey doesn't just buy great honey. It funds veteran beekeeping programs through Hives for Heroes.
Our first harvest is projected for summer 2027. Sign up below to be notified when Declaration Honey is available — and get exclusive early access.
